Under limited supervision, lead, and coordinates the activities and operations of all food service areas. Lead subordinate staff in the preparation of food, assures proper customer service expectations, Adheres to all Toledo Zoo policies, and maintains cleanliness and safety of food service areas. Reports to Executive Chef. This position is non-exempt under the Fair Labor Standards Act.
Essential Job Functions
Duties will include, but are not limited to monitoring and reporting on the following:
- Supervises the activities of subordinate personnel which involves instructing, assigning and reviewing work planning; maintaining standards; coordinating activities; acting on employee problems; allocating personnel; selecting new employees; evaluating employees; and recommending transfers, promotions, disciplinary actions, discharges.
- Supervises food preparation processes and monitors the amount of food prepared in accordance with seasonal demands and/or other conditions.
- Responsible for cash handling in stands, bars or other food service areas with registers.
- Be available to work all food services areas (catering, concessions and restaurant).
- Assist with inventory completion and entering each month.
- Supervises the cleaning of all food service areas and maintenance of equipment to ensure proper sanitation and health and safety guidelines are met.
- Adheres to all Toledo Zoo policies/procedures and all required OSHA and safety/health policies.
- Provides support to other Visitor Services departments including Catering, Park Operations, Merchandising and Warehouse operations.
- Assists Chefs, managers and supervisors with product inventories, new products, ordering, and storage and delivery schedules.
- Operates various types of equipment and machinery such as a remote radio, telephone, cash register, computer, ovens grills, fryers, dishwashers, freezers, refrigerators, steam equipment, kitchen equipment, scales, etc.
- Performs other related duties as required.
- Attend start meeting when assigned.
Minimum Training and Experience
- Prefer degree in Food Services, Business, or related field and three to five years of experience in food service management, or any equivalent combination of education, training, and experience.
- Provides the required skills, knowledge and abilities.
- Must possess required certification in food service sanitation.
- Must have a valid drivers’ license and be insurable by the fleet insurance carrier.
